When it comes to food, heat destroys enzymes. Enzymes are proteins that are catalysts for digestion, immune-system function, energy production and brain work. Heat destroys most vital enzyme types and changes all enzymes’ structure. Essentially, cooking diminishes the vital nutrients in your meals. As a result, cooked food is difficult to digest, puts undue stress on your pancreas and sits in your body longer. Needless to say this is a big problem.

Raw food digests in one-half to one-third of its cooked counterpart.

I have been eating a 50% raw, 50% lightly cooked organic vegan/vegetarian diet for 35 years. I feel okay, healthy. Shedding 25-50 pounds would be a blessing but it is easier said that done. It is a work in progress.

Periodically, experts pronounce a new breakthrough in nutritional science. More and more the announcements involve the importance and benefits of a plant based diet, eating organically grown food, exercise, drinking clean water, getting quality sleep and being engaged in one’s life. I cringe because none of this is new. Unfortunately, this information has been downplayed or ignored by Universities, Press, Government and the very monied interests that would be adversely effected.

A raw, lightly cooked, organic vegan/vegetarian diet is a direct threat to beef, pork, lamb, fish, and poultry interests. This is also true of pharmaceutical, chemical and agricultural interests. Consumers of the above diet will not be eatings animals. Consequently, most of these people will be far less dependent on medications and chemical treatments. There will be a great reduction, perhaps elimination of fungicides, insecticides, and pesticides. The science is clear. People will be healthier!

Additionally, raw, living food has been shown to increase stamina, improve cognition, lower cholesterol, reverse life threatening conditions, promote healthy skin and hair, improve vision, improve organ health, ease osteoporosis, improve quality/longevity and improve sex! Wow!
