Raw Almond Mayo
3/4 cup soaked/peeled almonds
1/4–1/2 cup apple cider vinegar
2–4 gloves of garlic
1/4 teaspoon cayenne pepper
pinch of seal salt
2 pitted dates
1/4–1/2 cup of olive oil
Small amount of water (careful not to thin it)
Blend all but oil, then slowly add olive oil to desired consistency
Avocado Mayo
1 medium avocado
juice of 1/2 lemon
approximately 100 ml of olive oil
approximately 50 ml of water
Mix all together using a small amount of water to get it going
Add olive oil slowly to get desired consistency
Pesto
1 1/2 cup of soaked, blanched almonds
6–ounces of basil
5–6 cloves of garlic
1 teaspoon salt
1/2–1 cup parsley (optional)
olive oil (to taste)
Blend nuts first, then blend all but olive oil (food processor)
Drizzle oil until desired consistency
Lemon Tahini Dressing
1/2 cup raw tahini
1/2 cup water
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
pinch of salt
pinch of ground black pepper
1 teaspoon curcumin (optional)
Whisk together
Let sit at least 15 minutes
