Eating plant based or, if you’re adventurous, eating vegan is, dare I say, on the rise. Oodles and oodles of evidence keep mounting regarding the affects of this nutrition plan on everything including human health. That’s great! In addition, it is cruelty free!
So, here we go!
Place a tablespoon or two of olive oil in your favorite stir fry pan.
Saute a nice vidalia onion along with garlic, ginger and turmeric.
Mix in red peppers, broccoli, mushrooms and peas.
Throw in some extra firm tofu or tempeh or seitan.
Season a bit with soy sauce, plum vinegar, salt, pepper and olive oil
Cook it but don’t chase out all the enzymes.
Serve with quinoa.
Simple! Experiment with this. There are many varieties of vegetables, fruits, nuts and seeds. Enjoy!
