In several of my posts I encourage readers to try a plant based diet. So, from time to time, a tried and true recipe will be posted. Give this a try.

Tofu Scramble with Crunchy Toast and Tea/Coffee

Start with a block of very firm tofu. Fresh and unpackaged if you can get it. Many natural food stores carry it fresh. If not, all food stores carry packaged tofu. Press down on tofu to squeeze out any extra water.

Add olive oil to a sauce pan (about 3-4 tablespoons). Lightly saute a combination of ginger, garlic and onions. Crumble the tofu in. It should look like scrambled eggs. Add turmeric for flavor and presentation. Season to taste. Serve with crunchy toast and hot tea/coffee.

All ingredients should be organic. Do your best. This is not a high heat saute. Low to medium heat for ten minutes.
