Here is a short list of cold vegan soups. I’m not going to bore you with recipes. They are easy to find. Experiment.

Gazpacho (too many versions to list, delicious)

Chilled Cucumber (many combinations, scrumptious)

Carrot Coconut (unbelievably delectable)

Cold Beet Borscht (delight your taste buds)

Minted Pea Soup (super tasty, many combos)

Coconut Corn Chowder (yummy)

Tomato Fennel/Tofu (you will want seconds)

Asparagus & Spring Peas (good for guests)

Vichyssoise (Potato Leek, very nice)

Zucchini Basil (great taste)

Carol made and I have eaten all of these. She started with cookbook/online recipes and then followed her imagination. I just found this list. Have fun!
