Hello! This will be short and sweet. It is a delicious and healthy beet salad that can be a meal or a side dish. As always, I encourage experimenting. Enjoy!

Peel, steam, and slice/cube (your preference) 5-6 medium beets

Dice about 1/2 cup of red onion or vidalia or scallions

Chop about 1/2 cup of parsley

Chop about 1/4 cup of cilantro

Sprinkle a generous dash of cumin seeds

Salt and pepper to taste

Add olive oil and lemon juice to taste

Combine all ingredients Gently mix Taste test Enhance if necessary

Serve warm or chilled

Enjoy!
