Chicken of the Woods Stir Fry is a truly delightful dish. It is vegan. It is simple.

It starts with the Chicken of the Woods mushroom. That’s right, it’s a mushroom dish. Don’t let that scare you. You will be glad you tried it.

First and foremost you need a Chicken of the Woods mushroom. Google or ask your phone for pictures and descriptions. They are highly edible and much desired by mushroom connoisseurs. They are easy to spot as nothing looks like them. Yellow to orange in color, they grow like a shelf on hardwood trees. When you find one, pick about the size of two to three portobellos. You can always come back for more. They are usually good for about 10 days.

They are easy to prepare since they have no gills. Simple wash and cut off any dark spots. Cut them into cubes or like french fries or whatever shape you like.

Saute them in olive oil with plenty of ginger and garlic. I usually add pumpkin seeds and medium jalapeno peppers. Salt and pepper to taste. Experiment! Enjoy!
